Ingredients

Instructions

Preparation

  • In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Stir until the ingredients are thoroughly mixed. Press this mixture firmly into the bottom of a 9-inch springform pan.
  • In a large bowl, beat the softened cream cheese until it’s incredibly smooth and creamy. Gradually add the powdered sugar and vanilla extract. Mix until fully combined. Gently fold in the whipped cream until it’s all blended.

Assembling the Cheesecake

  • Spread the cream cheese filling evenly over the crust.
  • In a saucepan, combine the mixed berries, granulated sugar, cornstarch, and water. Cook over medium heat while stirring constantly until the mixture thickens (about 5-7 minutes). Remove from heat and let it cool slightly.
  • Spoon the berry mixture over the cheesecake filling.

Chilling and Serving

  • Cover the pan and chill in the refrigerator for at least 4 hours or until set.
  • Before serving, garnish with additional fresh berries if desired. Slice and enjoy!
