Instructions

Simmering the Blueberry Swirl

  • In a small saucepan, combine the blueberries, sugar, and lemon juice over medium heat. Simmer for about 5 minutes, until juicy and thickened. Let cool, then blend until smooth and chill.

Blending the Colada Base

  • In a blender, combine the frozen pineapple, coconut cream, coconut rum (or additional coconut cream), sweetened condensed milk, and crushed ice. Blend on high until silky smooth and creamy.

Creating the Swirls

  • Drizzle chilled blueberry swirl inside glasses, then pour in the coconut mixture for a beautiful swirl effect.

Rimming and Garnishing the Glasses

  • Rim glasses with crystal sugar if desired. Top with whipped cream and sprinkle sugared blueberries.
