Instructions

Preparation

  • Blend the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then add vanilla extract and lemon zest if using.
  • In a separate bowl, whisk together the flour, baking soda, salt, and optional spices. Gradually combine with the butter mixture, then add milk one tablespoon at a time until a soft dough forms.
  • Cover the dough and chill in the refrigerator for at least one hour.

Baking

  • Roll the chilled dough to about 1/4 inch thick on a floured surface and cut out cookies with your desired shape.
  • Place cutouts on a lined baking sheet and bake in a preheated oven at 350°F (175°C) for 8-10 minutes.
  • Cool the cookies on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
