Instructions

Preparation

  • Heat olive oil in a large skillet over medium heat. Add the sliced chicken sausage and cook for 5-7 minutes, until browned. Remove the sausage from the skillet and set aside.
  • In the same skillet, add the chopped onion and minced garlic. Sauté for 2-3 minutes, until the onion becomes translucent and fragrant.
  • Stir in the orzo pasta and cook for 2 minutes, allowing it to toast slightly.
  • Pour in the chicken broth and bring to a boil. Reduce heat and let it simmer for 10 minutes, stirring occasionally, until the orzo is tender and most of the liquid is absorbed.
  • Stir in the heavy cream, chopped spinach, and the previously cooked sausage. Cook for another 2-3 minutes, until the spinach wilts and the mixture becomes creamy.
  • Remove from heat and stir in the grated Parmesan cheese. Season with salt and black pepper to taste. Garnish with fresh parsley before serving.

Notes

You can enhance flavors by adding lemon juice or red pepper flakes. Swap chicken sausage for turkey or vegetarian options, and feel free to include other vegetables like bell peppers or zucchini.
