Instructions

Preparation

  • Preheat oven to 375°F (190°C). Lightly grease your baking dish with oil or cooking spray.
  • In a mixing bowl, combine ricotta (or cottage cheese), shredded mozzarella, grated Parmesan, minced garlic, the egg, dried thyme or Italian seasoning, salt, and pepper. Mix until well combined.

Layering

  • Layer zucchini slices in the greased baking dish, ensuring they slightly overlap.
  • Spoon a layer of the cheese mixture over the zucchini, spreading it gently for even coverage.
  • Continue to alternate layers of zucchini and cheese mixture until all ingredients are used up, ensuring the final layer is cheese on top.
  • If using, sprinkle seasoned breadcrumbs over the top.

Baking

  • Place the dish in the preheated oven and bake uncovered for 30–35 minutes, or until bubbling and golden brown on top.
