Instructions

Preparation

  • Heat the olive oil in a large pot over medium heat.
  • Add the Italian sausage to the pot, breaking it apart as it cooks until browned and cooked through. Drain excess grease if necessary.
  • Add the diced onion, carrots, celery, and garlic. Cook for about 5-7 minutes until softened and aromatic.

Cooking

  • Stir in the diced tomatoes, cannellini beans, chicken broth, Italian seasoning, salt, and pepper.
  • Increase the heat and bring the soup to a gentle boil.
  • Reduce the heat and let the soup simmer for 20-25 minutes.
  • Cook the pasta separately according to package instructions. Drain and set aside.
  • Fold in the cooked pasta into the soup and allow to absorb flavors for a few minutes.

Serving

  • Ladle the hot soup into bowls and garnish with chopped parsley. Serve with garlic bread or crusty Italian loaf.

Notes

For added spice, consider adding red pepper flakes. This soup can also be made vegetarian by substituting sausage with mushrooms. Fresh herbs like basil or thyme can enhance the flavor.
