Ingredients

Graham Cracker Crust

  • 2 cups graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1 zest lime Zest of 1 lime

Creamy Filling

  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 3 large eggs
  • 1/4 cup lime juice
  • 1 teaspoon vanilla extract
  • 1 can crushed pineapple, drained

Instructions

Preparation

  • Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan.
  • In a large mixing bowl, combine the graham cracker crumbs, melted butter, granulated sugar, and lime zest. Mix until evenly moistened, then press firmly into the bottom of the prepared pan.
  • Bake for 10 minutes, then allow it to cool while preparing the filling.

Filling

  • In a mixing bowl, beat the softened cream cheese until smooth. Gradually add granulated sugar and mix well.
  • Add sour cream, eggs, lime juice, and vanilla extract, mixing until completely smooth. Gently fold in the drained crushed pineapple.

Combine and Bake

  • Pour the creamy filling over the cooled crust and spread evenly.
  • Bake in the preheated oven for 60-70 minutes. The center should be set but slightly wobbly.
  • Turn off the oven and let the cheesecake cool inside with the door slightly ajar for an hour.

Chill and Serve

  • Refrigerate the cheesecake for at least 4 hours or overnight before removing it from the springform pan.
  • Top with whipped cream, lime slices, pineapple chunks, and lime zest before serving.

Use fresh limes for a more intense flavor and allow cream cheese to soften at room temperature for smoother filling. Avoid overmixing to prevent cracks.
