Ingredients

For Serving

  • 30 g shelled pistachios Toasted and crunchy, for topping.
  • 60 ml neutral oil (grapeseed or sunflower) For creating vibrant pistachio oil.
  • 125 g burrata The star of the dish—soft and creamy.
  • 2-3 tbsp pomegranate seeds Adds visual appeal and tartness.
  • Micro herbs or edible flowers for garnish Optional for elegant presentation.
  • Cracked black pepper, to finish A sprinkle of heat.
  • Toasted sourdough, flatbread, or crackers For serving as a base.

For the Pistachio Oil

  • 30 g shelled pistachios For blending into the oil.
  • 60 ml neutral oil Used to extract flavor from pistachios.

Instructions

Make the Pistachio Cloud

  • In a mixing bowl, combine the ricotta, pistachio paste, and cream. Blend until airy and smooth. Season with salt and white pepper, then chill in the refrigerator.

Make the Pistachio Oil

  • Blend the shelled pistachios with neutral oil until smooth. Strain through a fine mesh sieve to obtain silky pistachio oil.

Assemble the Platter

  • Spread the whipped pistachio-ricotta in a cloud shape on a serving platter, placing the burrata in the center.
  • Drizzle the pistachio oil over the assembly and scatter with pomegranate seeds. Finish with cracked black pepper and optional garnishes.

Serve

  • Accompany the platter with toasted sourdough, flatbread, or crackers.

Notes

For the best taste, serve at room temperature, and avoid overworking the ricotta. Prepare the dish in advance for added convenience.
