Instructions

Caramelize the Pears

  • In a medium-sized pan over medium heat, melt 2 tablespoons of unsalted butter. Add the diced pears along with 2 tablespoons of brown sugar, 1/2 teaspoon of cinnamon, and 1/2 teaspoon of vanilla extract.
  • Cook for about 5-7 minutes, stirring occasionally, until the pears are tender and caramelized. Set aside to cool.

Prepare the Muffin Batter

  • Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  • In a large bowl, whisk together the dry ingredients: 1 1/2 cups all-purpose flour, 1/2 cup granulated sugar, 1/2 cup brown sugar, 1 1/2 teaspoons baking powder, 1/2 teaspoon baking soda, 1/2 teaspoon salt, and 1/2 teaspoon cinnamon.
  • In a separate bowl, whisk together the wet ingredients: 1/2 cup melted butter, 2 large eggs, 1/2 cup buttermilk, and 1 teaspoon vanilla extract.
  • Gently fold the wet mixture into the dry ingredients, incorporating the caramelized pears last. Avoid overmixing.

Make the Pistachio Crumble Topping

  • In a small bowl, combine 1/4 cup chopped pistachios, 1/4 cup all-purpose flour, and 2 tablespoons brown sugar.
  • Add cubed cold butter and combine until the mixture resembles coarse crumbs.

Assemble & Bake

  • Spoon the muffin batter evenly into the prepared muffin liners.
  • Sprinkle the pistachio crumble topping generously over each muffin.
  • Bake for 18-22 minutes, until muffins are golden and a toothpick inserted comes out clean.
