Crumble Topping

Instructions

Preparation

  • In a large bowl, cream butter, granulated sugar, and brown sugar until light and fluffy.
  • Add the egg yolk and vanilla extract, mix until smooth.
  • Stir in the flour, baking soda, and salt until combined. Cover and chill for 30 minutes.

Crumble Topping

  • In a small bowl, combine flour, sugar, and cubed cold butter for the crumble topping. Use your fingertips to rub the butter into the flour until it forms pea-sized crumbs.

Baking

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Roll dough into small balls and coat in granulated sugar.
  • Press a deep indent into the center of each cookie and fill with raspberry jam.
  • Sprinkle each cookie with the prepared crumble topping.
  • Bake for 10–12 minutes, or until edges are golden brown and centers are just set.
  • Allow to cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For the best results, ensure your butter is softened. You can add a pinch of cinnamon or experiment with flavored jams. For a vegan version, substitute butter with a plant-based alternative.
