Ingredients

For the crust

  • 1 cup all-purpose flour Foundation of the crust.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine 1 cup flour, cubed cold butter, and 2 tablespoons of sugar. Use a pastry cutter or your hands to mix until the mixture resembles coarse crumbs.
  • Grease an 8×8-inch baking pan. Press the crumbly mixture firmly into the bottom of the pan, ensuring an even layer.
  • Place the pan in the preheated oven and bake for 12–15 minutes, or until the crust is lightly golden brown.
  • While the crust is baking, whisk together 2 eggs, 1 cup sugar, 1/4 cup flour, and 1/4 teaspoon of salt in a separate bowl until smooth.
  • Gently fold the chopped rhubarb into your filling mixture, ensuring it’s evenly distributed.
  • Once your crust has finished baking and is still warm, pour the rhubarb custard filling over it.
  • Return the pan to the oven and bake for an additional 35–40 minutes, or until the custard is set and lightly golden on top.
  • Let the bars cool completely at room temperature. Once cool, slice into bars and optionally dust with powdered sugar.

Notes

Use fresh rhubarb for best flavor and texture. Allow bars to cool completely before slicing. Consider adding lemon zest to the filling for extra flavor.
