Ingredients

For the crust

  • 2 tablespoons sugar
  • 1/2 cup cold butter, cut into cubes
  • 1 cup all-purpose flour

For the custard filling

  • 1 cup chopped rhubarb
  • 2 large eggs
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup sugar
  • to taste Powdered sugar (for dusting)

Instructions

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine 1 cup of all-purpose flour, 2 tablespoons of sugar, and the cold butter. Mix until crumbly.
  • Press this mixture into a greased 8×8-inch baking pan, spreading it evenly across the bottom.
  • Bake the crust in the preheated oven for 12–15 minutes, or until it turns a light golden brown.

Custard Filling

  • While the crust is baking, whisk together the eggs, 1 cup of sugar, 1/4 cup of flour, and 1/4 teaspoon of salt in a separate bowl until smooth and creamy.
  • Gently fold in the chopped rhubarb, ensuring it is evenly incorporated.
  • Once the crust is golden, pour the custard mixture over it, spreading it out evenly.
  • Return to the oven and bake for an additional 35–40 minutes, until the filling is set and a toothpick inserted in the center comes out clean.
  • Once baked, allow it to cool completely before slicing into bars. Dust with powdered sugar before serving.

Notes

For a sweeter dessert, increase the sugar in the custard mixture. You can also add a splash of vanilla or almond extract for extra flavor. Ensure bars are completely cooled before cutting for neat serving.
