Instructions

Preparation

  • In a small pot, combine the chopped rhubarb, grated ginger, sugar, and water.
  • Heat the mixture over medium heat and bring it to a gentle simmer.
  • Continue to simmer for about 10 minutes, stirring occasionally, until the rhubarb is soft and has released its juices.
  • Remove from heat and strain the mixture through a fine sieve, pressing the solids to extract as much liquid as possible.
  • Allow the syrup to chill in the refrigerator. This can also be made ahead of time!

Serving

  • When you're ready to serve, fill a glass with ice and pour in the chilled rhubarb syrup.
  • Top with sparkling water or tonic for a fizzy lift.
  • Garnish with fresh mint leaves and a squeeze of lime.

Notes

Consider adding strawberries or raspberries to the syrup for a fruity twist. Store leftover syrup in the refrigerator for up to a week.
