Instructions

Preparation

  • Preheat your oven to 350°F (175°C).
  • Butter a 9-inch pie pan generously.
  • In a large bowl, beat together the ricotta cheese and granulated sugar until smooth.
  • Add the eggs one at a time, mixing well after each addition.
  • Stir in the vanilla extract, lemon zest, and orange zest.
  • In a separate bowl, whisk together flour, baking powder, and salt.
  • Gently fold the dry ingredients into your ricotta mixture until just combined.
  • Pour the final batter into the prepared pie pan, smoothing out the top with a spatula.

Baking

  • Bake for 40-45 minutes or until the pie is set and lightly golden.
