  • 3 medium beets, roasted & sliced into rounds These earthy vegetables serve as the base.
  • 1 large pear, sliced thin Adds a refreshing contrast.
  • 1/2 cup blue cheese, crumbled Use high-quality for the best flavor.
  • 1/4 cup pecans, toasted & chopped Provides a crunchy texture.
  • 1 tbsp honey Natural sweetener that enhances flavors.
  • 1 tbsp balsamic glaze Drizzle on top for tangy sweetness.
  • 1 tbsp olive oil Enriches the sautéed pears.
  • Fresh thyme for garnish Adds herbal freshness.

Instructions

Preparation

  • Wrap whole beets in aluminum foil and roast at 400°F (200°C) for 45–50 minutes until fork-tender.
  • Allow the beets to cool, peel away the skins, and slice into 1/2-inch thick rounds.

Cooking

  • Heat olive oil in a pan over medium heat. Add thinly sliced pear and drizzle with honey.
  • Sauté for about 2 minutes per side until lightly golden, tender, and sweet.

Assembly

  • Place one beet slice on a plate, add blue cheese, followed by a caramelized pear slice. Repeat layers to create towers.
  • Finish with another layer of blue cheese on top, then sprinkle with toasted pecans and fresh thyme.
  • Drizzle with balsamic glaze and serve immediately.

Notes

Ensure beets are fork-tender before peeling. Use ripe pears for better flavor contrast. Let pecans cool before chopping to maintain crunch.
