Ingredients

For the Towers

  • 3 medium beets, roasted and sliced into thick rounds Wrap in foil before roasting.

Instructions

Preparation

  • Preheat your oven to 400°F (200°C).
  • Wrap the medium beets in foil and roast in the oven for 45-50 minutes until tender.
  • Once cooked, allow the beets to cool before peeling and slicing them into ½-inch thick rounds.

Cooking

  • In a pan, heat the olive oil over medium heat. Add the sliced pears and drizzle with honey. Sauté for about 2 minutes on each side until lightly golden.

Assembly

  • Layer a slice of beet, blue cheese, and a slice of sautéed pear. Repeat to create a second layer and finish with a dollop of blue cheese on top.
  • Sprinkle with toasted pecans and fresh thyme sprigs. Drizzle with balsamic glaze.

Serving

  • Serve immediately for the best flavor and texture.

Notes

Roasting beets with skins on makes peeling easier. You can prepare the beets and pears in advance. Variations include using different cheeses or nuts.
