  • 3 medium beets Roasted and sliced into thick rounds
  • 1 large pear Thinly sliced
  • 1/2 cup crumbled blue cheese Creamy and tangy
  • 1/4 cup toasted pecans Roughly chopped
  • 1 tbsp honey Natural sweetener
  • 1 tbsp balsamic glaze For drizzling
  • 1 tbsp olive oil For cooking the pears
  • to taste fresh thyme sprigs For garnish

Instructions

Preparation

  • Preheat your oven to 400°F (200°C). Wrap each beet in aluminum foil and arrange them on a baking sheet.
  • Roast for about 45–50 minutes, or until they are tender when pierced with a fork. Let them cool, peel off the skin, and slice the beets into 1/2-inch rounds.

Caramelization

  • In a medium-sized pan, heat the olive oil over medium heat. Add the thinly sliced pear and drizzle with honey.
  • Allow the natural sugars to caramelize, cooking for about 2 minutes on each side until golden brown.

Assembly

  • Start layering your towers with a slice of roasted beet at the base, followed by crumbled blue cheese and a slice of caramelized pear.
  • Repeat the process once or twice, finishing with another sprinkle of blue cheese on top.

Finishing Touch

  • Top the towers with chopped toasted pecans and thyme sprigs, then drizzle with balsamic glaze.
  • Serve immediately and enjoy!

Notes

For a more intense flavor, consider using aged blue cheese. You can also sprinkle pomegranate seeds for added sweetness and color.
