Instructions

Roasting the Beets

  • Preheat your oven to 400°F (200°C).
  • Toss the beets with olive oil in a mixing bowl until evenly coated.
  • Wrap the beets tightly in foil and roast for 45 to 60 minutes or until fork-tender.
  • Allow the beets to cool, then peel and grate them.

Mixing the Cheese

  • In a medium bowl, combine softened goat cheese, grated beets, honey, garlic powder, and black pepper.
  • Mix until smooth and well combined.

Shaping the Log

  • Place plastic wrap on a counter and spoon the cheese mixture onto it.
  • Shape the mixture into a log and roll tightly in the wrap, sealing the ends.
  • Refrigerate for at least 1 hour to firm up.

Adding the Coating

  • In a small bowl, mix chopped pistachios and parsley.
  • Once the log has set, unwrap and roll it in the pistachio-parsley mixture until fully coated.

Serving

  • Slice the log into thick rounds and arrange on a platter.
  • Serve with crackers, toasted crostini, or fresh veggie sticks.

Notes

For easier peeling, run roasted beets under cold water while gently rubbing. You can substitute pistachios with walnuts or almonds. This log can be made a day in advance and coated right before serving.
