Ingredients

Cheese Mixture

Beet Mixture

Instructions

Preparation of Beets

  • Preheat your oven to 400°F (200°C). Start by wrapping your small beets in aluminum foil. Place them directly on the oven rack or on a baking sheet.
  • Roast for approximately 45 to 60 minutes until they are tender when pierced with a fork.
  • Once roasted, remove the beets from the oven and let them cool. Once cool enough to handle, carefully peel off the skin and finely dice them.

Mixing Ingredients

  • In a medium-sized bowl, combine the crumbled goat cheese, chopped chives, chopped dill, garlic powder, salt, pepper, and lemon juice. Mix well until the ingredients are fully incorporated into a creamy mixture.

Assembling the Log

  • Lay a piece of plastic wrap flat on a clean surface. Spread the cheese mixture into a rectangle, ensuring an even thickness across the surface.
  • Sprinkle the finely diced roasted beets evenly over the cheese mixture, then add the chopped walnuts and cranberries if you’re using them.
  • Using the plastic wrap, carefully roll the cheese and beets into a log shape. Tightly seal the ends of the plastic wrap to hold the log together, making sure it's compact.

Chilling and Serving

  • Place the wrapped log in the refrigerator to chill for at least one hour, allowing it to firm up and meld the flavors together.
  • When ready to serve, unwrap the log and slice it into rounds. Serve alongside an assortment of crackers, slices of crusty bread, or fresh veggie sticks for dipping.

Notes

For best results, roast the beets ahead of time and store them in the fridge. Substitute herbs based on preference and remember, a rustic look adds to its appeal!
