For the Whipped Ricotta

  • A pinch salt For enhancing the taste.

For Garnish

  • 1 tbsp chopped pistachios Optional, for added crunch.
  • 1 1/2 tsp hot honey Adds sweetness and heat.

Instructions

Preparation

  • Preheat your oven to 400°F.
  • In a large mixing bowl, toss the halved carrots with olive oil, fresh thyme, and salt.

Cooking

  • Spread the carrots on a lined baking sheet in a single layer. Roast for 20–30 minutes, or until soft and caramelized.
  • Turn the carrots halfway through for even cooking.

Whipping Ricotta

  • Combine ricotta, 1 tablespoon olive oil, lemon zest, lemon juice, and a pinch of salt in a food processor. Blend until smooth and fluffy.

Assembly

  • Spread the whipped ricotta on a serving dish.
  • Place the roasted carrots on top of the ricotta.
  • Drizzle with hot honey.
  • Garnish with optional pistachios or extra thyme.

Notes

For variations, experiment with other herbs or add smoked paprika for depth. You can prepare the whipped ricotta a few hours in advance.
