Instructions

Preparation

  • Toss the beef cubes in flour until fully coated.
  • Heat 1 tablespoon of canola oil in a Dutch oven over medium heat until shimmering.
  • Sear the beef in batches for about 5-7 minutes until browned on all sides, then set aside.
  • Add the diced shallot to the pot and cook for 2-3 minutes until softened, then stir in the minced garlic and cook for another minute.

Cooking

  • Add the fire-roasted red bell peppers, tomato paste, beef broth, Worcestershire sauce, and browned beef to the pot. Stir to combine and bring to a boil.
  • Reduce heat to low, cover, and let the stew simmer for about 1 hour.
  • Stir in the cream of mushroom soup and continue to simmer uncovered for another 30 minutes, or until thickened to desired consistency.

Notes
