Wet Ingredients

  • 1 1/2 cups room temperature water Helps create moist dough
  • 2 tablespoons cornmeal Prevents sticking and adds crunch

Instructions

Mixing

  • In a large bowl, combine flour, minced garlic, chopped rosemary, kosher salt, ground black pepper, and instant yeast.

Forming Dough

  • Pour in room temperature water and stir until a sticky dough forms, about 30 seconds.

First Rise

  • Cover the bowl tightly with plastic wrap and let it rise at room temperature for 18–24 hours until bubbles form.

Prepare Skillet

  • Lightly oil a 10-inch cast iron skillet and dust the bottom with cornmeal.

Shape Dough

  • Dump the dough onto a floured surface and shape it into a ball gently.

Final Rise

  • Place the dough ball in the skillet, cover it with a towel, and let it rise for 2 hours.

Preheat Oven

  • Preheat your oven to 450°F (232°C).

Baking

  • Transfer the skillet to the oven and bake for 30–40 minutes until golden brown.

Notes

Serve warm, and consider blending in different herbs for varied flavors. A water-filled baking dish can be placed in the oven for steam to achieve a crunchy crust. Store wrapped in a clean towel at room temperature for up to three days, or freeze for longer storage.
