Instructions

Cook the Orzo

  • Start by melting 1 tablespoon of butter in a saucepan over medium heat. Stir in the orzo, toasting it for about two minutes until golden.
  • Pour in the chicken broth, bring to a gentle boil, then reduce the heat and cover. Let it simmer for 8-10 minutes, stirring occasionally, until tender.
  • Mix in minced garlic, lemon zest, lemon juice, remaining butter, Parmesan, salt, and pepper. Keep warm.

Cook the Salmon Bites

  • Toss the salmon cubes with olive oil, garlic powder, paprika, salt, and pepper.
  • Heat a nonstick skillet over medium-high heat and sear the salmon for 2-3 minutes on each side until golden and cooked through.
  • Drizzle with fresh lemon juice just before finishing cooking.

Assemble and Serve

  • Spoon the orzo onto plates and top with the salmon bites.
  • Sprinkle with fresh parsley and serve hot.

Notes

Ensure your skillet is hot enough before adding the salmon; it should sear perfectly. Optionally, add red pepper flakes for heat. You can substitute salmon with chicken or shrimp, and add heavy cream for creamier orzo.
