Instructions

Preparation

  • Preheat the oven to 150°C (300°F).
  • In a mixing bowl, combine the goat cheese and heavy cream until smooth.
  • Pour the mixture into ramekins, filling each to the brim.
  • Place the ramekins in a baking dish and fill the dish with water halfway up the sides of the ramekins.

Baking

  • Bake for about 30-35 minutes or until set, indicated by a slight jiggle in the center.
  • Allow to cool and chill in the refrigerator.

Serving

  • Before serving, add a spoonful of fig chili jam on top and caramelize the sugar if using black pepper.
  • Serve with a glass of dry rosé or port.

For best results, use high-quality goat cheese and let the dish chill fully for enhanced flavors. Avoid rushing the baking process and ensure even filling of ramekins.
