Instructions

Preparation

  • Preheat your oven to 180°C (350°F).
  • Lay out phyllo sheets on a clean workspace and brush each with melted butter. Sprinkle crumbled feta across the sheet. Stack multiple layers and press into a mini muffin tin to form small cups.
  • Bake phyllo cups for 10–12 minutes until golden brown.

Filling

  • In a bowl, beat cream cheese, whipped ricotta, and egg until smooth. Add Greek yogurt, lemon zest, lavender buds, salt, and pepper, mixing until velvety.
  • Spoon the cheesecake mixture into the cooled phyllo cups, filling them to the top.
  • Return to the oven and bake for an additional 12–15 minutes until just set and slightly puffed.

Serving

  • Allow cheesecake bites to cool completely. Warm lavender-infused honey slightly and drizzle over the bites before serving.
  • Garnish with fresh thyme leaves or microgreens, and sprinkle optional cracked pepper or crushed pistachio.

Notes

Ensure the phyllo dough is thawed and covered to prevent drying. Room temperature cream cheese and ricotta will create a smoother filling.
