  • Flaky salt (optional) For a finishing crunch.

Instructions

Make the Filling

  • In a bowl, whip together the soft goat cheese and cream cheese (or Greek yogurt).
  • Add the chopped fresh sage, lemon zest, salt, and black pepper.
  • Mix until the filling is light, airy, and well-combined.
  • Transfer it to the fridge for about 20 minutes to firm up slightly.

Prepare the Dough

  • In another bowl, combine the mashed sweet potato, glutinous rice flour, olive oil, and salt.
  • Mix the ingredients until they form a soft, pliable dough.
  • Add warm water a little at a time until you reach the desired consistency.

Form the Mochi Balls

  • Divide your dough into 8 equal pieces.
  • Flatten each one into a disc in the palm of your hand.
  • Spoon a small dollop of the chilled filling into the center of each disc.
  • Pinch the edges together to seal, rolling the filled dough into a smooth ball.

Steam the Mochi

  • Prepare a steamer basket lined with parchment squares.
  • Arrange the mochi balls in the steamer with space to expand.
  • Steam over medium heat for about 8-10 minutes until slightly glossy.

Cool and Finish

  • Let the mochi sit for 5 minutes to cool down.
  • Serve warm or at room temperature, garnished with fried sage leaves.
  • Drizzle with olive oil or honey for an added touch.

Notes

Freshness Matters: Always use fresh sage for the best flavor. Avoid Overworking the Dough: Mix until just combined to achieve the ideal mochi texture.
