  • 0.5 cups finely diced red bell pepper A splash of color and sweetness, adds a delicious crunch.
  • 2 cloves garlic, minced Infuses the burgers with aroma and flavor.
  • 1 tbsp fresh parsley, chopped Brightens the dish with a fresh herbal note.
  • 1 piece egg (or flax egg for vegan) Acts as a binder to hold the patties together.
  • 0.25 cups grated Parmesan (or nutritional yeast for vegan) Offers a rich, umami flavor.
  • 0.5 cups breadcrumbs (panko or whole wheat) Provides texture to ensure patties hold their shape.
  • 0.5 tsp smoked paprika Introduces subtle smokiness.
  • 0.5 tsp salt Essential for flavor enhancement.
  • 0.5 tsp dried thyme Complements the earthy tones of the lentils.
  • 2 tbsp olive oil for cooking Adds flavor and helps to achieve a crispy exterior.

Instructions

Preparation

  • In a skillet over medium heat, sauté the onions, bell peppers, and garlic in 1 tablespoon of olive oil until soft and fragrant. Set aside to cool.

Mixing the Patties

  • In a large bowl, slightly mash the cooked lentils, aiming for a mix of whole and broken lentils. Stir in the sautéed vegetables, parsley, egg, Parmesan, breadcrumbs, and spices. Ensure everything is well combined.

Forming the Patties

  • Divide the mixture into equal portions and form into burger patties, shaping them to be about 1/2-inch thick.

Cooking the Patties

  • Heat the remaining olive oil in the skillet over medium heat. Cook each patty for 4 to 5 minutes per side until crispy and golden brown.

Serving

  • Enjoy the patties on toasted buns with toppings like avocado, sautéed mushrooms, and fresh lettuce, or serve them as a side with a salad.

Notes

For added flavor, mix in some finely chopped mushrooms to the lentil mixture. Use fresh herbs like basil or cilantro for personal twists. If the mixture is too wet, add more breadcrumbs.
