Instructions

Preparation of Dough

  • In a medium saucepan over medium heat, combine the water and unsalted butter. Watch closely as the butter melts and begins to combine with the water.
  • Once fully integrated, add the all-purpose flour all at once, stirring vigorously with a wooden spoon until the mixture transforms into a ball, pulling away from the sides of the pan (about 1-2 minutes). Remove from heat and let it cool slightly.

Adding Flavor & Eggs

  • Once the dough is warm, add each egg one at a time, mixing until smooth and glossy. Introduce the grated Parmesan, black pepper, and pinch of salt, folding them in gently.

Piping & Frying Churros

  • Heat oil in a heavy skillet to reach a temperature of 180°C (350°F). Using a piping bag fitted with a star tip, fill the bag with the savory dough.
  • Carefully pipe lengths of the dough (about 10-12 cm) into the hot oil, frying for about 3-4 minutes on each side until golden brown and crisp. Drain the churros on paper towels.

Dusting & Making Whipped Burrata

  • Prepare the dusting mixture by combining the finely grated Parmesan, garlic powder, and smoked paprika in a shallow bowl. Roll the warm churros in this mixture.
  • In a mixing bowl, blend the burrata, cream cheese, Greek yogurt, lemon zest, salt, and pepper until airy and smooth. Chill briefly in the refrigerator for the flavors to meld.

  • Arrange the churros on a platter, with the whipped burrata dip either on the side or in a central bowl for sharing.
