Instructions

Preparation

  • Heat olive oil in a large skillet over medium heat. Once the oil glistens, add in the chopped onion.
  • Sauté the onion for about 3-4 minutes until it softens and begins to caramelize.
  • Stir in the minced garlic and let it cook for 1 minute until fragrant.
  • Add the ground turkey to the skillet, breaking it apart with a spatula to ensure even cooking.
  • Cook the turkey for 5-7 minutes until browned and fully cooked through.
  • Stir in the diced zucchini, chickpeas, cumin, smoked paprika, salt, and black pepper.
  • Combine everything well and cook for another 5-7 minutes, stirring occasionally until the zucchini becomes tender.
  • Remove from heat and sprinkle fresh parsley over the top before serving.
