  • 2/3 cup milk helps to create the biscuit dough
  • 2 tbsp melted butter for brushing on top for extra richness
  • Fresh chopped parsley for garnish (optional), a pop of color and freshness

Instructions

Preparation

  • Preheat your oven to 400°F (200°C). Grease a 9x13-inch baking dish lightly to prevent sticking.
  • In a large skillet over medium heat, pour in the olive oil. Add the finely chopped onion and sauté until soft and translucent, about 3-5 minutes.
  • Add the ground beef to the skillet, cooking until browned. Drain any excess grease from the pan.
  • Pour in the sloppy joe sauce, stirring well to combine with the beef and onions. Let it simmer for 3-5 minutes, allowing the flavors to meld, and season with salt and pepper to taste.
  • Pour the sloppy joe mixture into the prepared baking dish, spreading it out evenly. Sprinkle the shredded cheddar cheese generously across the top.
  • In a mixing bowl, combine the biscuit mix and milk. Stir until just combined, being careful not to overmix. Drop spoonfuls of the biscuit dough over the cheesy meat mixture in the baking dish.
  • Place the casserole in the oven and bake uncovered for 20-25 minutes, or until the biscuits are golden brown and cooked through. Once done, brush the tops with melted butter and garnish with parsley if desired.
