Instructions

Preparation

  • Heat the olive oil in your slow cooker or a large skillet over medium-high heat.
  • Sear the brisket for 3-4 minutes on each side until browned, then set aside.
  • Add the sliced onions and minced garlic to the slow cooker, sprinkle with salt, and sauté for about 4 minutes until the onions begin to soften.

Cooking

  • Pour in the balsamic vinegar, beef stock, dried thyme, dried rosemary, and black pepper. Stir to combine.
  • Return the seared brisket to the slow cooker, ensuring it is coated with the sauce.
  • Cover and cook on LOW for 9-10 hours or HIGH for about 4 hours until the brisket is tender.

Gravy Preparation

  • Once tender, remove the brisket and set aside.
  • Transfer the onions and sauce to a saucepan, stir in the honey, and simmer for 8-10 minutes until thickened.

Serving

  • Slice the brisket against the grain into 1/2-inch thick pieces.
  • Spoon the balsamic onion gravy over the brisket and serve with your choice of sides.

Notes

Consider marinating the brisket overnight for deeper flavor. Serve with mashed potatoes or roasted vegetables for a complete meal. Leftovers can be used for sandwiches.
