Ingredients

For the Smash Burger

  • 1 lb ground beef (80/20) Juicy and flavorful, perfect blend for a succulent burger patty.
  • 1 teaspoon salt Enhances the natural flavors of the beef.
  • 1/2 teaspoon black pepper Adds a subtle zing.
  • 1/2 teaspoon garlic powder Aromatic essence that complements the beef beautifully.
  • 1/2 teaspoon smoked paprika Offers a smoky depth.

For the Quesadilla

  • 4 large flour tortillas Soft and pliable.
  • 2 cups shredded cheddar or American cheese Creamy and melty cheese.
  • 1 small onion, finely chopped For caramelization.
  • 1 tablespoon butter or oil Used for caramelizing onions.

For the Sauce

  • 1/2 cup mayonnaise Creamy base for the sauce.
  • 1 tablespoon ketchup Sweet and tangy.
  • 1 tablespoon mustard Adds a dash of acidity.
  • 1 teaspoon pickle juice Adds unexpected tanginess.
  • 1/2 teaspoon smoked paprika Ties the burger sauce together.
  • 1/2 teaspoon garlic powder Enhances the sauce flavor.

Instructions

Preparation

  • Divide the ground beef into 4 equal portions and roll them into loose balls.
  • Heat a cast-iron pan over high heat until it’s roaring hot. Place the beef balls into the pan and smash them flat with a spatula or burger press.
  • Cook for 2–3 minutes on each side, seasoning with salt, pepper, garlic powder, and smoked paprika.

Caramelize the Onions

  • In the same pan, melt butter over medium heat. Add the finely chopped onions and cook for about 8–10 minutes until golden.

Assemble the Quesadilla

  • Heat a clean pan over medium heat and place a tortilla into the pan.
  • Sprinkle 1/2 cup of shredded cheese onto the tortilla. Add the smash burger patty and spoonful of caramelized onions.
  • Drizzle with the sauce and finish with more cheese and another tortilla.

Cook to Perfection

  • Cook for 2–3 minutes, pressing lightly. Flip and cook until golden brown and the cheese is melted.

Serve

  • Remove the quesadilla from the pan, let it rest, then cut into quarters and serve immediately.

Notes

For a healthier option, consider using leaner meats or plant-based alternatives. Pair with guacamole or salsa.
