Instructions

Preparation of the crust

  • In a large bowl, combine the all-purpose flour and salt.
  • Cut in chilled, cubed butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  • Slowly add cold water, a tablespoon at a time, mixing until the dough comes together.
  • Shape the dough into a disc, wrap it in plastic wrap, and chill in the refrigerator for 30 minutes.

Baking the crust

  • Preheat your oven to 375°F (190°C) as the dough chills.
  • On a floured surface, roll out the chilled dough into a circle large enough to fit a 9-inch pie dish.
  • Gently place the dough into the dish, trimming any excess and fluting the edges.
  • Prick the bottom with a fork to prevent bubbles and pre-bake the crust for about 10 minutes.

Making the filling

  • In a saucepan over medium heat, whisk together sugar, cornstarch, and a pinch of salt.
  • Add the well-drained crushed pineapple and cook until bubbly and thickened, stirring frequently.
  • Remove from heat and quickly whisk in egg yolks and sour cream; stir in the butter and vanilla extract.
  • Allow this delicious filling to cool slightly.

Assembling the pie

  • Pour the prepared pineapple filling into the pre-baked crust.
  • Smooth the top with a spatula and place it back in the oven, baking for an additional 20-25 minutes, until the filling is set and the top is lightly golden.

Cooling and serving

  • Once baked, remove the pie from the oven and let it cool completely at room temperature.
  • For the best flavor and texture, chill in the refrigerator for at least 2 hours before serving.
