Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and grease and line a 10x15-inch jelly roll pan with parchment paper.
  • In a small bowl, whisk together the all-purpose flour, baking powder, cinnamon, nutmeg, cloves, and salt.
  • In a larger bowl, beat together the eggs and granulated sugar until thick and pale. Stir in vanilla extract.
  • Gradually fold in the dry ingredients, then slowly add in the apple cider.
  • Pour the batter into the prepared pan and spread evenly. Bake for 12-15 minutes or until the cake springs back when touched.
  • While the cake is baking, sprinkle a clean kitchen towel with powdered sugar.
  • Once the cake is done, invert it onto the prepared towel and peel off the parchment paper.
  • Start rolling the cake and towel together from the short end and let it cool completely while rolled.

Assembly

  • In a mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  • Unroll the cooled cake and spread the whipped cream evenly across the surface. Drizzle with caramel sauce and sprinkle diced apples.
  • Roll the cake back up without the towel, dust with powdered sugar and drizzle more caramel sauce before serving.
