For the loaf

For the frosting

Instructions

Preparation

  • Preheat oven to 175°C (350°F) and grease and line a standard loaf pan with parchment paper.
  • In a large mixing bowl, whisk together the mashed sweet potato, light brown sugar, vegetable oil, eggs, and vanilla extract until smooth.
  • In a separate bowl, sift together the all-purpose flour, baking powder, baking soda, salt, and spices.
  • Carefully fold the dry ingredients into the wet mixture until just combined.

Baking

  • Pour the batter into the prepared loaf pan and bake for 45–55 minutes, testing for doneness with a skewer.

Frosting

  • While the loaf cools, whip together the cream cheese and butter until creamy, then gradually add the powdered sugar, vanilla extract, and salt.
  • Once the loaf has cooled, spread the frosting on top and sprinkle with chopped pistachios.

Store leftovers wrapped in plastic wrap or an airtight container for up to three days. Toast for an indulgent treat.
