Ingredients

For the Yum Yum Sauce

  • 1/3 cup olive oil mayo For creamy yumminess.
  • 2 tablespoons ketchup Adds tang and sweetness.
  • 1 tablespoon Worcestershire sauce Enriches the sauce.
  • 1 teaspoon seasoned salt For extra flavor.
  • 1/4 teaspoon cayenne pepper For extra heat if desired.

Instructions

Preparation

  • Preheat your oven to 425°F (220°C) to ensure the chicken is perfectly cooked.
  • On a large baking sheet, toss the chicken with 1 tablespoon of tamari and 1 tablespoon of orange juice. Season with black pepper and lightly dust with cornstarch or arrowroot powder.
  • Drizzle with olive oil and bake for about 15 minutes.

Sauce Preparation

  • In a medium bowl, whisk together 1/3 cup of tamari, 2 tablespoons of orange juice, honey, chili paste, garlic, and ginger.

Cooking

  • After 15 minutes, pour about two-thirds of the prepared sauce over the chicken, tossing to coat. Return to the oven for an additional 5 minutes.
  • Broil for 1-2 minutes to get charred edges. Drizzle any remaining sauce over the chicken before serving.

Yum Yum Sauce

  • In a small bowl, mix together the olive oil mayo, ketchup, Worcestershire sauce, seasoned salt, and cayenne pepper.
  • Taste and adjust the seasoning as needed.

Assembly

  • Place the cooked rice into serving bowls, topped with sliced chicken, cucumber, avocado, kimchi, and fried wontons.
  • Finish with a generous drizzle of yum yum sauce.

Notes

Marinate the chicken for 30 minutes to an hour for more flavor. Adjust chili paste to taste for spice sensitivity. Incorporating nuts or crispy shallots can add texture.
