Instructions

Cook the Steak

  • Season the flank or sirloin steak with salt, pepper, and optional chili powder or cumin for an extra kick.
  • Heat a grill or skillet over medium-high heat and cook the steak for about 4–5 minutes on each side until it reaches your desired doneness.
  • Once cooked, let it rest for at least 5 minutes before slicing thinly against the grain.

Roast the Corn

  • While the steak is resting, roast the corn by grilling or pan-roasting on medium heat until charred, about 10 minutes.
  • Allow it to cool slightly, then slice off the kernels with a sharp knife.

Make the Sauce

  • Blend together the fresh cilantro, sour cream or Greek yogurt, lime juice, garlic, olive oil, and a bit of salt in a food processor until smooth.
  • Adjust the consistency with additional water or lime juice as needed.

Build the Bowls
