Instructions

Preparation

  • Preheat the oven to 325°F (165°C) and grease a 9-inch springform pan.
  • Prepare the crust by combining graham cracker crumbs, sugar, and melted butter in a bowl. Press firmly into the bottom of the pan.
  • For the filling, beat the softened cream cheese with sugar until smooth. Add eggs one at a time, followed by vanilla extract and strawberry puree.

Baking

  • Pour the cheesecake mixture over the crust and bake for 55-60 minutes, or until the center is almost set.
  • Remove from oven, cool on a wire rack for 10 minutes, then loosen the cheesecake and cool completely.

Ganache Preparation

  • Heat heavy cream in a saucepan until simmering. Pour over dark chocolate chips in a bowl and stir until smooth.

Assembly

  • Once the cheesecake is cooled, pour the ganache over the top.
  • Combine sliced strawberries, sugar, and lemon juice. Let sit for 10 minutes.

Chilling
