Ingredients

For the cake

  • 2 sleeves graham crackers
  • 2 cups fresh strawberries, sliced

For the filling

  • 1 box instant vanilla pudding mix (3.4 oz)
  • 1.5 cups cold milk
  • 1 package cream cheese, softened (8 oz)
  • 1 tub whipped topping (Cool Whip) (8 oz)

For the frosting

  • 0.5 cups heavy cream
  • 0.5 cups white chocolate chips
  • 0.5 tsp strawberry extract
  • 1 drop pink gel food coloring (optional) For enhanced visual appeal

Instructions

Preparation of the Filling

  • In a large bowl, beat the softened cream cheese until it’s perfectly smooth.
  • Add in the instant vanilla pudding mix and pour in the cold milk.
  • Beat the mixture until it thickens up nicely.
  • Once thickened, gently fold in the whipped topping, creating a creamy filling for your cake.

Layering the Cake

  • In a 9x13 inch dish, place a single layer of graham crackers at the bottom.
  • Spread half of the cream filling on top, followed by scattering the sliced strawberries over it.
  • Add another layer of graham crackers, then spread the remaining filling on top, and toss more strawberries onto this layer.
  • Finish with a final layer of graham crackers.

Making the Frosting

  • Heat the heavy cream in a saucepan until it is just simmering.
  • Pour the hot cream over the white chocolate chips in a bowl and let it sit for about 2 minutes.
  • Stir until the chocolate is smooth and melted.
  • Mix in the strawberry extract and, if desired, a drop of pink gel food coloring.

Final Assembly

  • Spread the pink strawberry frosting evenly over the top layer of graham crackers.
  • Cover the dish with plastic wrap or aluminum foil and refrigerate for at least 6 hours, preferably overnight.

Serving

  • When ready to enjoy, cut the cake into squares and serve chilled.
  • Top each square with extra strawberries or a sprinkle of graham cracker crumbs.

Allow your cream cheese to come to room temperature before beating for a smooth consistency. Consider adding lemon zest for a citrusy twist. For texture, top with crushed graham crackers before serving. You can replace strawberries with other fruits like raspberries or blueberries.
