Ingredients

Instructions

Preparation

  • Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan.
  • In a bowl, combine graham cracker crumbs with melted butter and press into the bottom of the prepared pan. Bake for 10 minutes and let cool completely.
  • In a large bowl, beat softened cream cheese until smooth. Gradually add sugar, then mix in sour cream and vanilla extract.
  • Add eggs one at a time, mixing well after each addition, and fold in diced strawberries.

Baking

  • Pour the cheesecake batter into the cooled crust and bake for 60-70 minutes until set.
  • Turn off the oven and let the cheesecake cool inside with the door slightly ajar for 1 hour.

Cooling

  • Refrigerate the cheesecake for at least 4 hours or overnight.

Preparing Topping

  • In a saucepan, combine sliced strawberries, sugar, cornstarch, and water. Cook over medium heat until thickened, stirring constantly. Let cool before spreading over the cheesecake.

Serving

  • Decorate with whipped cream and additional fresh strawberries right before serving.
