Instructions

Preparation

  • Preheat your oven to 350°F (175°C). Roll out your favorite pie crust and place it into a 9-inch pie dish, crimping the edges beautifully. Chill it in the refrigerator while you prepare the filling.

Mixing the Filling

  • In a large mixing bowl, combine the ricotta cheese and granulated sugar. Beat them together until creamy.
  • Add the eggs one at a time, mixing thoroughly after each addition. Stir in the vanilla, almond extract, citrus zests, and flour until the mixture is smooth.

Assembling and Baking the Pie

  • Carefully pour the ricotta filling into the chilled crust, smoothing out the top with a spatula.
