Ingredients

  • 4 cups vegetable broth Nourishing liquid for blending flavors.

  • 1 can coconut milk Creamy and luscious, provides a rich base.
  • 1 tsp dried thyme Earthy and fragrant herb.
  • 1 tsp ground paprika Adds a smoky depth.

Instructions

Preparation

  • In a large pot, heat the olive oil over medium heat.
  • Add the chopped onion and minced garlic to the pot. Sauté for 3–4 minutes until softened and fragrant.
  • Toss in the cubed sweet potatoes, corn kernels, vegetable broth, and dried thyme. Stir well to combine the ingredients.
  • Increase the heat to bring the mixture to a boil. Once boiling, reduce the heat to let it simmer for 20–25 minutes, or until the sweet potatoes are tender.
  • Stir in the coconut milk and ground paprika, allowing the chowder to simmer for an additional 5 minutes.
  • Use an immersion blender to blend part of the soup while leaving some chunks for texture.
  • Add salt and pepper according to your taste preferences.
  • Serve hot, garnished with freshly chopped parsley.

Notes

Add more veggies, like carrots or bell peppers, for more color and nutrition. Spice it up with cayenne pepper or top it with croutons for added crunch. Experiment with herbs like rosemary or sage.
