Ingredients

For the Sweet Potatoes

For the Tahini Sauce

  • 1/4 cup tahini Brings creaminess and nuttiness.
  • 2 tbsp melted butter (or olive oil for vegan) Adds richness.
  • 1 tbsp lemon juice Brightens the flavor.
  • 1 tbsp maple syrup Enhances natural sweetness.
  • 1 clove garlic (minced) For extra flavor.
  • 2-3 tbsp warm water (to thin) Adjust for consistency.

Instructions

Preparation

  • Preheat the oven to 400°F (200°C). Rub the halved sweet potatoes with olive oil, salt, and pepper. Place cut-side down on a baking sheet and roast for about 30-40 minutes until tender.

Cooking the Chickpeas

  • Heat olive oil in a pan over medium heat. Add the rinsed chickpeas with paprika, garlic powder, cumin, chili flakes, salt, and pepper. Cook for about 5-7 minutes, stirring occasionally, until crispy.

Making the Tahini Sauce

  • In a bowl, whisk together tahini, melted butter (or olive oil), lemon juice, maple syrup, minced garlic, and a pinch of salt. Gradually add warm water to reach a smooth consistency.

Assembling the Dish

  • Once the sweet potatoes are roasted, flip them over and gently mash the insides with a fork. Top with crispy chickpeas, drizzle with tahini butter sauce, and sprinkle with parsley and breadcrumbs.

Notes

Choose firm and blemish-free sweet potatoes for the best flavor. For an added depth, roast the chickpeas before adding spices for extra crispiness. This dish stores beautifully; keep the components separate until serving.
