Instructions

Preparation

  • In a mixing bowl, cream the softened unsalted butter and powdered sugar until light and fluffy, about 3-5 minutes.
  • Gradually add the all-purpose flour, lime zest, chili powder, and salt to the creamed mixture. Mix until a soft dough forms.
  • Shape the dough into a log, wrap in plastic, and chill in the refrigerator for 30 minutes.
  • Preheat the oven to 175°C (350°F).

Baking

  • Unwrap the chilled dough and slice it into 0.5 cm thick rounds.
  • Place the slices on a parchment-lined baking tray and bake for 12-14 minutes until golden around the edges.
  • Allow cookies to cool completely on a wire rack.

Glazing

  • In a separate bowl, whisk together the powdered sugar, coconut milk, vanilla extract, and a pinch of salt until smooth.
