  • Heat 3/4 cup of olive oil in a small pan over medium heat, allowing it to warm gently without smoking.
  • Toss in the thyme sprigs and let them sizzle, ensuring the sound softens as they release their aromatic oils.
  • Stir in the chopped almonds and cook for about 2-3 minutes until they turn lightly golden, adding a lovely toastiness.
  • Mix in the garlic slices and Aleppo pepper (if using), cooking for just 1 minute—make sure to keep a close watch to avoid burning the garlic.
  • Take off the heat and pour in the remaining 1/4 cup of olive oil, creating a luscious mixture.
  • Add the crumbled feta and parsley, gently mashing with a fork to blend everything together harmoniously.

Notes

For enhanced flavor, try using a variety of nuts instead of almonds, such as walnuts or pistachios. This dip can also be made ahead of time; let the flavors meld in the fridge for a couple of hours before serving.
