Ingredients

Instructions

Preparation

  • Preheat the oven to 325°F (165°C). Grease a 9-inch springform pan.
  • In a medium bowl, combine the chocolate cookie crumbs, sugar, and melted butter. Press the mixture firmly into the bottom of the prepared pan.

Making the Batter

  • In a large bowl, beat the softened cream cheese and sugar until smooth and creamy.
  • Melt the semisweet and milk chocolate chips together and allow to cool slightly before adding to the cream cheese mixture.
  • Add the eggs one at a time, mixing well after each addition, and stir in the vanilla extract.

Baking the Cheesecake

  • Pour the cheesecake mixture over the prepared crust.
  • Bake for 55-60 minutes, or until the center is almost set. Cool on a wire rack for 10 minutes.
  • Run a knife around the edges and allow to cool completely before removing the sides of the pan.

Preparing the Ganache and Finishing

  • Heat the heavy cream in a saucepan until it simmers and pour over the dark chocolate chips. Stir until smooth.
  • Allow the ganache to cool slightly before pouring it over the cooled cheesecake.
  • Decorate with chocolate shavings and fresh raspberries if desired.

Notes

For an extra rich flavor, use high-quality chocolate. Chill the cheesecake for at least 4 hours or overnight before serving. To enhance the chocolate flavor, add a teaspoon of instant coffee to the batter.
