Instructions

Preparation

  • Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
  • Combine the chocolate cookie crumbs and melted butter in a bowl until it resembles wet sand. Press this mixture into the bottom of the prepared pan for the crust.

Mixing Filling

  • In a large mixing bowl, beat the cream cheese, granulated sugar, and vanilla extract until completely smooth.
  • Add the eggs one at a time, beating well after each addition.
  • Divide the batter into three portions. Stir the melted semi-sweet chocolate into one portion, combine the milk chocolate chips into the second portion, and gently fold the white chocolate chips into the third portion.

Layering and Baking

  • Pour the semi-sweet chocolate batter over the crust, spread it evenly, then layer the milk chocolate batter, followed by the white chocolate batter.
  • Bake for 50-60 minutes, until the center is almost set. Allow to cool in the oven with the door slightly ajar for about 1 hour.

Cooling and Serving

  • Refrigerate for at least 4 hours, preferably overnight, before serving.

Notes
