Instructions

Bake the Chocolate Cake

  • Preheat your oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
  • In a mixing bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  • In another bowl, mix sugar, brown sugar, vegetable oil, eggs, vanilla extract, and buttermilk until smooth.
  • Gradually add dry ingredients and mix gently. Slowly pour in hot coffee and stir until smooth.
  • Evenly divide batter into pans and bake for 20-25 minutes. Cool in pans on wire rack.

Prepare the Chocolate Mousse

  • Heat 1 cup heavy cream until warm in a saucepan; pour over 1 cup chocolate chips and let sit for 2 minutes.
  • Stir until smooth and set aside to cool.
  • Whip the remaining 1/2 cup heavy cream with powdered sugar until stiff peaks form.
  • Fold whipped cream gently into cooled chocolate until fully incorporated.

Assemble the Cake

  • Place one cake layer on a serving plate and spread a layer of chocolate mousse on top.
  • Place the second cake layer on top and refrigerate for 30 minutes.

Make the Ganache & Decorate

  • Heat the remaining 1/2 cup of heavy cream and pour over 1 cup chocolate chips and butter.
  • Stir until smooth and pour ganache over the chilled cake, allowing it to drizzle down.
  • Garnish with strawberries, chocolate shavings, and curls.

Chill & Serve

  • Refrigerate the cake for at least 1 hour before slicing.
