Preparation

  • In a medium saucepan, mix the mashed bananas, crushed pineapple with its juice, and the zesty lemon juice. Stir well to ensure everything blends smoothly.
  • Incorporate the vanilla extract, ground cinnamon, salt, and granulated sugar into the mixture. Stir until well combined.

Cooking

  • Place the saucepan over medium heat and bring the mixture to a gentle boil, stirring frequently to prevent sticking.
  • Cook, stirring regularly, until the jam thickens and darkens slightly, about 20 to 25 minutes.

Finishing Touch

  • Once thickened, stir in the dark rum and let it simmer for another 5 minutes.

Cooling and Storing

  • Remove the saucepan from heat and allow the jam to cool slightly.
  • Pour the jam into sterilized jars, seal tightly, and refrigerate.
