Instructions

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine 2 cups of graham cracker crumbs with 1/2 cup of melted unsalted butter and mix well. Press this mixture into the bottom of a 9-inch springform pan.
  • In another bowl, beat together 2 cups of softened cream cheese and 1 cup of powdered sugar using an electric mixer until smooth.
  • Add 1 cup of mango puree and 1 teaspoon of vanilla extract to the cream cheese mixture and stir gently until fully incorporated.

Baking

  • Carefully pour the cream cheese mixture over the prepared crust and smooth the top with a spatula.
  • Place the pan in the oven and bake for 50-60 minutes, or until the center is set but still slightly jiggly.

Cooling and Serving

  • Allow the cheesecake to cool at room temperature, then refrigerate for at least 4 hours before serving.
  • Before serving, garnish with fresh mango slices.
